A to Z of Vegetables

Juices from the different varieties are easily distinguished, particularly by colour, with red cabbage dominating any blend it is added to. Dark green cabbage is the best choice for juicing as it is nutritionally superior. Cabbage juice is often used for digestive problems particularly stomach ulcers, it detoxifies the stomach and upper bowels and cleanses the liver. It is regarded as an anti-cancer vegetable and provides a rich source of vitamin C and Savoy cabbages, in particular, are full of chlorophyll which helps restore red blood cell levels.

Preparation:
Wash thoroughly, remove outer leaves, chop and feed into juicer.

Contains:
Betacarotene (Vitamin A), Vitamins C and E, Folate, Potassium, Thiamin, Iron

Cabbages should not be used excessively by people with underactive thyroids, or people on blood thinning medication.
