The juice of beet has a stunning purple colour, with a distinctly earthy flavour. This hints at the very rich mineral and vitamin content. Beetroot has been used in eastern Europe to treat convalescents and build resistance to disease, it is also a valuable juice for women thinking of
becoming pregnant as it is rich in folates and folic acid. Also used as a blood fortifier, and liver cleanser it will help detoxify the kidneys. Reputedly an Anti-Cancer and Anti-Inflammatory it also boosts cell oxygenation and aids fat metabolism. Beetroot greens, if you can use them, add to the healthy properties of the juice. However as the juice is very strong use it sparingly and in combination with other vegetables.
Preparation:
Cut off the fibrous bottom, scrub thoroughly, and chop into pieces small enough to fit into the juicer feed tube. There is no need to peel this vegetable unless you want to. The greens are also suitable for juicing
Contains:
Vitamin C, Betacarotene (Vitamin A),Calcium, Iron, Potassium, Betanin, Malonic Acid, Phytosterol, Saponin. Soluble Fibre.
Beetroot leaves also contain Oxalic Acid which can aggravate Arthritis and Kidney Stones and should be avoided by people with these conditions.
TIP.
Due to their strong reddish purple juice, beetroots should be followed in the juicer by another vegetable. Alternatively you should clean the juicer immediately afterwards to prevent staining.
